The basic motivation for the development of the good hygiene practice guide

Directive 93/43/EEC regarding the hygiene of edible products is the one that regulates, at the European level, the way of working and the hygiene rules in the sector of bakeries, pastry shops and stores selling these products.
Article 3 of this regulation stipulates that all enterprises in the food sector identify critical points in terms of food safety in their activity and ensure that the most appropriate measures are established, put into practice,
respected and brought up to date following the principles used in the context of the development of the HACCP system. In addition, they are called to comply with the hygiene prescriptions, stated in the annexes of this regulation.
Art. 4 of the European Regulation provides for the development of the Guide to good hygiene practices aimed at complying with the provisions of art. 3.
The above-mentioned guide is intended to help manufacturing companies in the food sector to comply with hygiene measures and to apply them during the manufacture and sale of products.
