Introduction to Indian Cuisine
It cannot be said that there is a well-defined Indian cuisine, but a wide variety of cuisines.
These can be discovered not in the restaurant but in Indian families where, in general, the culinary tradition is preserved from generation to generation. A large part of the population is vegetarian by choice,
tradition or by obligation. We find, therefore, a wide variety of vegetarian recipes, which use especially dried vegetables (lentils, chickpeas, etc.) for their protein intake.
Many sauce dishes are based on spice blends such as masala or other spice blend that characterizes each recipe. got into the habit
especially among Westerners, to call this mixture curry or curry, among the French, but this improper term is very little used in India. In fact, the word curry derives from a Tamil word "kari" and means "sauce, accompaniment for rice".
Traditionally, "grand chefs" are found mostly in families or in large communities,
where recipes are passed down from generation to generation. Thus you will always find extraordinarily varied recipes, depending on the region, family or community.
The unforgettable smell of India is not just the delicate scent of jasmine and roses or sandalwood in the warm air.
It is also the smell of the spices so essential to Indian cuisine.
The diversity of ingredients and spices makes Indian cuisine extremely tasty.
